Instead, it strikes the perfect balance between richness and elegance. The wine shows bright citrus flavours with characters of lemons, limes and oranges, supported by hints of nectarines and white fleshed peaches. These interplay with impressions of passionfruit, tropical spices and Turkish musk. It expands in the mouth to become full bodied and concentrated.

This wine has been made utilising the traditional techniques which have made the Chardonnay of the Burgundy region in France so famous. Pegasus Bay thus adopt a hands-off approach so that until the last, or blending, stage, the wine has largely made itself.

On the nose there are aromas of citrus, as well as honeydew melon and some stone fruit (peach and nectarine). In addition there is a hint of struck match which adds complexity and a flinty minerality. The palate is concentrated with refreshing acidity and a lingering finish.

Lavish yet complex, the richly textured mouthfeel soon gives way to ripe phenolics and a rousing lash of acidity that canters across the palate, saddling up for a persistent and lasting finish, beckoning you back for more.

This wine has a star bright lemon hue and while lemons, limes and mandarins come to the fore, there is a background of ripe stonefruit such as peaches and apricots. Honeysuckle and honeycomb influences come from botrytis, which has also made the wine more full bodied and concentrated. It has a spine of natural acidity and tingling minerality that helps draw out the palate structure to a citrus zest finish

The wine has a bright lemon hue. In the bouquet and flavour there is a complex intertwining of fruity and savoury elements. There are impressions of citrus fruits, white peaches, nectarines and greengages overlying nuances of smoky bacon, grilled mushrooms and barbequed sweet corn.

Aromas of orange blossom, nectarine and fresh nutmeg combine with delicate layers of subtly integrated oak, fine minerality and ripe citrus fruit flavours. Delicate elegance underpins this finely textured wine which reflects Peregrine's commitment to organic wine growing on the Bendigo sub region that contribute to this Chardonnay.

Light straw-yellow in appearance, the wine has aromas of lemon peel, honey and wax with lemon sherbet, tropical fruits and butterscotch. The palate is luscious with lovely dried apricots, lemon marmalade, and toffee characters. The wine showcases a bright finish of lemon acidity breaking through the natural residual sweetness.
