Blue fruits instantly emerge, specifically elderberries, blueberries, and bilberries. Poached plums merge with the exotic spiciness of cassia bark, imparting rich flavours. A hint of meat adds depth and character to the profile. The mouthfeel is sculpted by chocolate powder tannins, which are luxurious and precise, lending a structure that is both assertive and velvety. Also present is the umami complexity of tomato consommé, enriched with piquant olive tapenade. The palate is further textured by a ferrous minerality.

The palate is immediately enveloped by cocoa powder-like tannins - smooth yet profound in their impact. Penfolds Koonunga Hill Shiraz Cabernet is a reflection of the Penfolds winemaking style and philosophy. Sourced from premium vineyards across South Australia, the wine is known for its full-flavoured style with excellent Shiraz and Cabernet Sauvignon fruit, firm yet well-rounded structure and balanced oak. Made as a traditional 'Australian blend', the Shiraz component provides fleshy fruit flavour while Cabernet Sauvignon provides a frame of fine grained tannins. A contemporary offering of South Australian Shiraz, this release provides a fruit-driven wine which is generous in flavour and persistent across the palate.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.
