The Cabernet Sauvignon grape varietal is widely planted across South Australia's premium wine regions, particularly in the Limestone Coast where grapes with tremendous structure and beautiful aromatics are found. The Penfolds Max's range pays tribute to the winery's first Chief Winemaker, Max Schubert, celebrating his relentless pursuit of excellence and the enduring philosophy of sourcing the finest fruit from Australia's best wine regions. Max's Shiraz reflects this legacy with a contemporary interpretation of one of Australia's most celebrated varieties. Aromas of ripe cherries, raspberries, cranberries and plum are layered with notes of white fruit cake, vanilla sponge and savoury Mediterranean influences. The palate is smooth and precise, revealing redcurrant, rhubarb and goji flavours with silky graphite-like tannins and steely acidity. Approachable in its youth, it offers balance, focus and refined texture.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.

Tannins are restrained, so this is also a lovely wine to enjoy as a pre-dinner option on its own and delicious when served slightly chilled.
