The palate is generously full and fruity with plush velvety tannins that lead on to a lingering tangy aftertaste. While ready to drink on release we expect this wine to improve for several years and live for well over a decade with careful cellaring.

Lavish yet complex, the richly textured mouthfeel soon gives way to ripe phenolics and a rousing lash of acidity that canters across the palate, saddling up for a persistent and lasting finish, beckoning you back for more.

Upon release the wine is bright ruby in colour. There is a teasing array of vibrant red fruit on the nose including raspberry, pomegranate, cherry and plum. Spice and herbal notes, as well as a savoury underlay, add to the wine's complexity. While the palate has generous fruit weight and velvety tannins, it is balanced with refreshing acidity and a structure that gives the wine classic North Canterbury tension and pinosity.

This wine has a star bright lemon hue and while lemons, limes and mandarins come to the fore, there is a background of ripe stonefruit such as peaches and apricots. Honeysuckle and honeycomb influences come from botrytis, which has also made the wine more full bodied and concentrated. It has a spine of natural acidity and tingling minerality that helps draw out the palate structure to a citrus zest finish

Upon release it has a subtle lemon hue. The bouquet is vibrant, an intoxicating assortment of tropical and citrus. Heady aromas of passionfruit and pineapple flirt temptingly against a backdrop of grapefruit, green apple, lemon peel and a hint of gunflint. The mouthfeel is textured yet precise, with a rousing whip of acidity and simmering phenolics that give the wine increased structure and length. A complex and serious Sauvignon Blanc, displaying intense varietal character, a multi- faceted palate, and a long salivating finish.

Blue fruits instantly emerge, specifically elderberries, blueberries, and bilberries. Poached plums merge with the exotic spiciness of cassia bark, imparting rich flavours. A hint of meat adds depth and character to the profile. The mouthfeel is sculpted by chocolate powder tannins, which are luxurious and precise, lending a structure that is both assertive and velvety. Also present is the umami complexity of tomato consommé, enriched with piquant olive tapenade. The palate is further textured by a ferrous minerality.

The palate is immediately enveloped by cocoa powder-like tannins - smooth yet profound in their impact. The wine boasts volumes of Cabernet character, showcasing cool fruits that are well lifted and vibrant. A barrel ferment nuance adds depth without overshadowing the fruit's purity. Sourdough notes bring a rustic edge which complement the lush profiles of plum fruits, blackberry, mulberry, wild cherries and more distinctly tart morello cherries.

The core is undeniably sweet/rich yet sophisticated. The wine opens expansively - firm in structure yet big and glossy on approach. Tannins are remarkably balanced; they assert their presence without detracting from the lush blackcurrant fruit at its heart. Freshness is maintained through lively acidity, contributing greatly to the wine's depth and length. Well-integrated oak underpins these flavours without overwhelming them - focused and enhancing rather than competing with the fruit profile. A hint of Sarsaparilla adds an unexpected twist that lingers into the finish.

Deep amber/mahogany in colour with green-gold tinges, this is a blend of the finest old tawnies. The palate shows classical Penfolds fruitcake, liquorice and vanillin oak flavours with a sweet full and round mid-palate, and a finish that persists on and on.
